This crowd-pleasing recipe is perfect for the hot days of summer when the cherry tomatoes are abundant on the vine. Ultimate Cowboy Caviar is so versatile! My favorite way to serve this tasty dip is over eggs for breakfast or a bed of lettuce for lunch. It also makes a colorful tangy dip for social gatherings. Ultimate Cowboy Caviar boasts seven different whole plant foods and monounsaturated fats, making it a healthy and delicious option.

Ingredients
2 cans of black beans or pinto beans, drained (approximately 3 cups)
1 red, orange or yellow bell pepper, chopped
1 apple, diced
1/4-1/2 red onion, diced
5 green onions, chopped
5-8 garlic cloves, minced
1/3 cup cilantro, chopped (omit if you are not a fan, or consider adding another herb like parsley or dill)
1/2 cup extra virgin olive oil
1/2-3/4 cup red wine vinegar (add the larger amount for more tang)
1-2 teaspoon cumin
2 teaspoons salt
Pepper, to taste
Before serving, add:
2 avocados, cubed
2 cups cherry tomatoes, halved
Instructions
Toss the first 7 ingredients (black beans, bell pepper, apple, red onion, green onions, garlic, and cilantro) into a large container with a cover.
Mix the olive oil, red wine vinegar, cumin, salt, and pepper in a large jar. Then pour over the other ingredients. Taste test and adjust salt and pepper to your preferences, then cover.
Chill in the refrigerator for at least 2 hours.
Before serving add avocados and tomatoes.
