Sweet & Salty Toasted Pecans (Sugar-free)

Description:

These pecans are the ultimate snack—perfectly buttery, with a delightful balance of savory and sweet. They’re satisfyingly crunchy and make for a wholesome treat you can enjoy any time. When toasting, their aroma fills the kitchen with a rich, nutty scent that my family swears smells just like popcorn!


Note: These pecans are sweetened with liquid stevia, making them a sugar-free indulgence. Plus, this recipe can easily be doubled or tripled to share the deliciousness.


Ingredients:

·       1-1/2 cup pecans

·       1 tablespoons extra virgin olive oil (EVOO)

·       2–3 droppers full liquid stevia (Trader Joe’s preferred)

·       1 teaspoon vanilla extract

·       Salt, to taste


Instructions:

Toast the Pecans:

Preheat your oven or toaster oven to 350°F. Spread the pecans in a single layer on a baking sheet, ensuring they aren’t crowded (overcrowding prevents even toasting). Toast them in the oven for 5–7 minutes, watching closely to prevent burning. The pecans should be slightly darker but not blackened.


Prepare the Coating:

While the pecans are toasting, mix the EVOO, liquid stevia and vanilla in a small bowl or cup. The mixture may not fully combine and will appear bubbly—that’s perfectly fine.


Coat the Pecans:

Once the pecans are toasted, carefully transfer them to a larger bowl while they’re still hot. Pour the EVOO and stevia mixture over the pecans, tossing until they’re evenly coated.


Season and Serve:

Sprinkle with salt to taste. Let the pecans cool completely before eating or storing them in an airtight container.


Enjoy:

These irresistible pecans are perfect as a snack, a salad topper, or a sweet and salty addition to yogurt or desserts.
